Scotch-Irish myself. I grew up on Sheppard's Pie. We called it (please don't tell Mum) Sheep S#!+ Pie, cause it was whatever was left in the fridge in a mashed potato casserole. Might be beef, pork, mutton, or no meat (never chicken, though - Mum always made something else out leftover chicken), and peas, carrots, celery, onions - just whatever Mum had. She made the whole mish-mash of whatever she had in a cast iron skillet on the stove, then shoveled it into a big cast iron Dutch Oven she had piled a ton of fresh mashed potatoes in, made kinda a giant pie outta it, covering the top with more mashed potatoes and baked it, "somewhat hot", without the lid for "a bit. You know. Til it's done." Then she'd bring it out and throw a bunch of whatever cheese she had on top and put the cast iron top on it for "a bit", and that was supper. Like it or not. "There's your plate, there's your spoon and fork, there's the pot. Dig in or don't. There's food on the table. Say your Lord's Prayer first. There's starvin' children in India. Be thankful your not in their lot." Loved and hated Sheep S#!+ Pie. Tell you what, though. As an adult looking back; there was always food on the table and Sheep S#!+ Pie is WAYYY filing in the belly! No matter what's in it. As an adult . . . a couple pints makes any version taste good. Especially when you have been missin' any home cooking for "a bit". Thanks for the walk down Memory Lane. I mean that sincerely. Now if you'll excuse me; I'm about to annoy the Hell outta my truck stop neighbors with some "High Kings" cranked to a rude level before drifting off in the middle of "Nowhere Montana" and getting up way too early. Got to the shipper at 1530 for an 1830 appointment. Bumped the dock at 2020. Still haven't started loading me. The light hasn't even gone red, yet. Nearly 0030. /sigh
