I just started with cooking in the truck. Yes I fooled around before with a George Foreman grill. Bought two other ways to provide fire to a pot or pan. Haven’t used them.
Now I bought these provided meals shipped to my terminal. Disappointed at first. Thought they would be heat and serve. Nope. They provide everything and how it’s to be cooked. On second thought. That results in healthier fresher food.
I tried using my lunch box. No. So I bought an Insta Pot. The 6 quart size. I threw everything in. Added what looked like appropriate water. Set it on slow cook. With venting. Cooked for 4 1/2 hours. Then went to keep warm for 6 1/2 hours. I’m surprised. It tasted good. Healthiest meal I’ve had on the road.
Part of this was so many restaurants not even serving any vegetables anymore.
Meals in restaurants over $20 now. Getting less.
Had to do something.
I’ve got a bunch to learn. So far been lucky. Glad I got the InstaPot.
BTW… I only get home once in three months at best.

What is this "provided meals" you had shipped to your terminal? Got a brand? Price etc?

Green Chef out of Boulder. They keep charging me less than listed. Been paying $62 for three meals of two servings. Sometimes I eat all at once. Other times no. Very healthy food. Made a major difference in me. You have to cook it all up. I just throw everything in the instapot together. Usually tastes ok. Sometimes very good. That’s not important to me. Importance is healthy. It’s very high quality and healthy.

Tried different approaches to cleaning my instapot. Tried a so called special Dawn you spray on and wipe off. Nope. One thing I found best. Pour about an inch or two of water in it. Set it on slow cook. Even anything burnt on comes right off. Works great.
