    Gut, skin, behead. Cut crossway pieces say 3/4 inch thick.
    In a paper grocery sack, say 2 cups corn meal, 1 tsp black pepper, 1 tsp salt. shook together.. (ratio)
    Beat up an egg, in a small dish. Wipe the pieces thru the egg.
    Drop the coated pieces into the bag and shake it all up.
    Drop a few pieces into the hot grease, when they float up, remove and replace a piece.
    Can cook all night or until you run out of fish maintaining a rotation of out/in same heat/grease.

    (Crossways cut allows you to get all the meat in nice bite size with any bone readily visible. I only fillet crappie and brim.)
    (Once you have the fish pieces prepared, let the wife or handy girl use the meal mix to make hushpuppies. Just add chopped onion.)
    (Last cooked fish before lost Peggy in 2011. Memory list make be off.)

    Skinning machine..
    Drive a 60 penny nail into a (shady) tree in your backyard, about chest high, let stick out about 2 inches, hacksaw the head. off.
    File a well tapered point on it, Then bend an inch of it upwards 90 degrees. Grab a fish, slam hook him on it, Cut across back of head to open skin, pliers to pull skin off.. Adjust to your height, tree, and size fish.
