What if it Snows?

And emergency backup ham.....

 

Cast old arn skillet

Light coating of olive oil, medium high heat

Cut a block of Spam into cubes (I only use GENUINE Spam....no off brands, that's just me)

Cook until browned/burnt to taste

Add about two cups of already-cooked brown rice(that already had onion and parsley added while cooking)

Stir it around awhile, letting some of the rice crisp up and the Spam cook more.

Crack two eggs into the pan, stir around to scramble the eggs and distribute throughout the mix.

This is where I usually add chopped celery, but I didn't have any.

Any leftover veggies from the fridge go in the pan (thawed frozen peas in the photo)

Cook just enough to warm up the veggies.

Couple dashes of soy sauce, stir.

Remove from heat. I like to let it sit for a couple minutes before I dig in, but it's probably not necessary.

And there ya have it.....
