I had tested the injector with the DEF Quantity, and it came out at 131mL, so it should be good? Right?

Sorry, meant the dozer injector and the dozer injector block. The injection rate you're seeing is fuel not def. The more fuel the higher the temp will go. Sometimes I've just replaced the dozer, this last time I've had to do the dozer injector and the HC doser. The dozer injector is behind the turbo in the exhaust. The HC block is on the other side of the motor (driver side near firewall).
The HC Dozer block controls the fuel going to that dozer injector. It possible that one or both of those are causing the problem.
When replacing the injector make sure you really clean out that hole with a screwdriver to loosen the carbon and long wire brush.
For the HC block you need several wrenches because it has fuel and coolant likes going to it. -
