My main gripe is im tired of eating out . Not a big difference between resturant and truck stop resturant. Just want to cook my own meals is my point

 

You can do it. At first it seems like a lot of hassle.
After you get some systems down, it gets easy.
A refrigerator and microwave is well worth it.
Have mentioned before, do a lot of cooking at home, portion and freeze. Make sure and clearly mark what is in the container. Didn’t do that once. Meatloaf for 4 days.

Better food for you, and will be a lot less money spent.

 

You will learn to brew perfect coffee exactly the way YOU like it. A small crock pot is a good idea IMHO. l used to go into grocery stores and buy a baked whole chicken and a single serving salad.

 

I'm planning to possibly bring even a small pellet grill. One that would fit in the side box. Granted, reality might say it is too much. But right now it is in the "plans." I mean if I am gonna cook steak. I'm not gonna be mean to it and use gas or a skillet.

Never underestimate the flavor of a steak or pork chop cooked in a good cast iron skillet.
