During the work on the pinion seals, come to find out the farmer I bought the truck off of slapped a band-aid on it. Needs a new intermediate ?driveshaft?, and that's what caused the issues with the pinion seals

Also, found a small company out of Wisconsin pulling reefer. Said I should be able top pull 48k in the trailer, they charge $6 on the hundred weight, going from WI to Eastern PA, & NJ.

You do have people rooting for you.
I would take a stab at the exhaust leak,
depending on where it is - can you band clamp over it?
Sometimes they require just tearing it apart and replacing stuff,
My Freightliner has 4" flex from turbo pipe to exhaust, and I need to do that.
I see little soot spots in several places.
Same goes for marker lights, take any new side marker and gut the LEDs,
and stick the new guts inside your old housing. Silicone seal it water-tight. Old; updated.
Of course it will be real bright, and different than the others, so you have to do them all.
Same goes for regulator, unless its totally stripped, the rivets can be drilled out,
and use bolts to reinstall. Is it power, or crank? Grease the gears (for first time in 25 years.)
Usually the channel gets screwed up to bind the glass, making it harder to operate,
you can find new channel strip @ the Dealer Stealer, or on Hemmings Motor News, or J. C. Whitney.
Wax the glass edge putting it together, don't put it in dry, any car wax to make it glide, not grab.
While you're at it, run your hand over the windshield glass.
Rough? same thing here; helps the wipers, too.

Take the Door Panel off ...Spray all moving parts with PB Blaster ..Spray the Tracks also...

Why wait? With the exception of the fifthwheel you can do all that “punch list” stuff yourself.
Most fifthwheel stuff is doable too with a little more experience and confidence.
Are you waiting on the shop because they pushed your truck to the back burner? Some shops tend to do that with older stuff. If so get used to that unless you can do some of it yourself.
