We ended up eating hotdogs last night.
That chunk of brisket had so much connective tissue to was like boot leather. I sliced it and left it in the crockpot all night..... It's like butter now

Almost turned it into scrap metal last night. -
I've not done a brisket yet. Wonder if that's possible on a pellet grill during a reset.

The pro's say the internal temperature has to reach 190° before you wrap it to get it to pull. What I've found is it depends on what part of the brisket you are dealing with. Two piece off the same brisket cooked exactly the same....one you won't be able to eat.
I'm probably done with brisket once I use up the thirty pounds in the freezer. You can make very good burnt ends with a arm roast consistently. -
