Small electric fry pan, paper plates/bowls, plastic utensils, paper towels. One appliance let's you fry meat, make grilled cheese sandwiches, cook eggs, steam vegetables, etc. Easy to clean...just wipe out with paper towels. A small drip coffee maker is a must if you are a coffee drinker. I've tried having a crock pot, instant pot, GF grill.......too much of a hassle to store and clean for me. Also used to have a microwave in the truck. Took up too much space and I rarely used it. Plus, every truck stop has a microwave if you need one

I used to bring left over meats and add veggies and maybe a can of cream of mushroom soup.
