I've been offered a set of 3.73.. I'm concerned it'd put me to low of an rpm for my dinky 11.1 at a decent cruise speed.. Right now I'm right in its power band at 1550-1700, 63-70mph..

Guess it would have made more sense to look into all this last year while the top end was apart, & I got a new factory spec camshaft put in..

2750 rpm in a series 60 is where stock injector rocker arms fail.
Yours would live a long life with 2100 rpm as rated rpm. This is peak horsepower point. Not peak torque. Peak torque is still gonna be around 1450-1500 rpm. That said is why I like 1600-1700 cruise rpm. When you pull it down to 1450 down shift.

You could get a factory supercharged 6.2l. They will take it.
If I was building on a budget. I would use a iron block 6.0l for normall aspirated.
If I was gonna hang a hair dryer on one. Iron block 5.3l. You will need aftermarket heads, but you are gonna have to get wild to destroy the bottom end.
