If you have access to hot water a french press works well to make coffee in the truck. Takes about 15min.
If you've got an inverter, Black & Decker make a simple single cup coffee maker that does about 20oz and a 20oz tumbler fits in it. Ive had mine for at least 15yrs and it still works perfect.

I got a stanley thermos at the house we'll be picking up next time through. Whoever designed the inside of our truck was a complete dufus. Wasn't enough storage for just one, much less two. No place that makes sense for a coffee pot, or any cooking appliances.
So the coffee pot has to go back to a bin on the top bunk while not in use. Not convenient but ya gotta work with what ya got. -
