I was driving last night to an oil well to deliver Frac sand and the traffic light in front of me turned red so I started to downshift. When I came to a stop I saw that the RPM gauge was pegged at 1900 RPM but I could hear that the engine was at idle and also noticed that the coolant temperature was completely at 0 degrees and a low oil pressure light came on.I shut the engine off to reset the gauges and sure enough everything went back to normal. What could have caused this?

In my exp. International is notorious for temporary gauge malfunctions if you start the truck too soon.

When you key on, let the gauges completely sweep and be done for a moment before you actually hit starter. I always waited until all the ABS clicks are done as well. It is like trying to use the computer, before it is done booting up.

Obviously it could be a loose connection or something, but this is what I would make sure of first.

That said, my last one, a ProStar, had a thing it did where the whole left half of the dash would sweep to 0, a few warning lights would come on, and the engine would quit. After awhile I attributed it to heat where the fuses and relays and breakers are because after a cool down period, everything just worked again, no codes or anything. The HVAC sits right under all of that in front of the passenger seat and seems to always leak heat out under the dash where it builds up. I never figured out exactly which relay it was but kept the heat at a minimum and only had the problem if I forgot to minimize the heat.
