I get what you're saying, but the main reason I said for them to keep all money and not worry about paying me is two-fold. 1) I don't pay for any repairs while they are using it and 2) it gets road-tested for my boss. Going about it this way, I can continue to work for my boss, and build up that maintenance account for when it is ready to lease on with him. It was my intention to get virgin drives and Alcoa's before I put it on the road anyway, so if he does not, I'll've already expected to pay $3k for tires and rims.

would have something in writing, or at least, an audio recording of the agreement

Terrible idea letting people you do not even know hammer your truck and you are not even getting a check.
Get it on your bosses insurance and use one of his empty trailers while you are off. Burn some fuel and repeat. How much fuel do you need to burn before he will let you run you own truck?
I would park it in the front yard with a mail box on the front and flower pots on the dash before I turned to over to a bunch of knuckle heads.

Sounds like a win for him and a lose for you.

I don't understand this "road test?" If you've got it all fixed up and road legal you shouldn't have anything to worry about.

The issue is that my boss will not lease my truck on unless I run it out on the road for a couple of months. Even with grabbing one of his trailers, he doesn't want to do it. In my eyes, if I were to lease on to, say, CPG (intermodal company), to run it and make sure it'll be fine for him, then leave after 3-4 months, that's a dick move.

The shop working on it are not strangers, and the reason I said they could keep all of the money, is because they would be responsible for any repairs while it's out on the road. The typical lease from Ryder/Penske is that whoever is leasing the truck (e.g. me) would be responsible for repairs. Whereas, if it's in the lease agreement with the shop that they keep 100% of the gross, are responsible for repairs, and I would include a waiver of subrogation; so no one would be able to come after me for any reason. I'm just leasing the truck to them, short term, to ensure it's road-worthy.

The biggest obstacle for my truck and my boss is he doesn't want to mess with paper logs. If it passes his test, i have the maintenance fund built up, and he still balks because of the paper logs, i'll call him out on it.

That is the point of the test, to make sure it is good enough. It was a farm truck for 20 years. There is a bit of a difference going from 120k of soybeans 35 mph 5 miles down a country road to the silo vs 80k for a few hundred miles at 70mph+ down the highway.

If it was mine I would pull the axles and inspect the bearings , reseal axles and pinions and replace all the universals.

New brakes all around and replace or repancake the chambers, new rubber air hoses and plastic air hoses .

Inspect the clutch and replace it if needed. Drain trans and pull cover and inspect.

Motor seems to run fine but throw on a new water pump ,belts, hoses, starter , alternator , turbo if you have the cash.

Maybe a compressor and inspect and pressure test the radiator.

Not much else that can go bad from there other than suspension and steering box and pump and hoses.
