    They look pretty good. Not sure if it's a shadow in the picture, but the bottom steak looks a bit "wedgie" (thickness not uniform due to being cut on an angle due to saw operator error)

    2 or more ribs gets you into "roast" country.

    A 3-incher with one rib is the biggest rib steak I've seen, but I'm not a master cutter by any means, and I actually hope I can go back to cutting meat some day, and see more signs and wonders......

    Looks like pretty standard supermarket trim spec to me.

    Not disagreeing with you, or saying that it's right......it just "is".


    When we lived back east, we used to go to an ACTUAL butcher shop. Man, that guy could work MAGIC with meat!

    You'd pay top dollar over the supermarket price, but when you got the meat home and unwrapped it, you'd just stand there looking at it, tears streaming down your cheeks as you whisper reverently, "It's beautiful.......so, SO, beautiful!"
