In the case of cooking and using something pulling a lot of juice, you may have to run your truck to keep the voltage up. You can use a small microwave for a lot of things like boiling water, making scrambled eggs, and heating for about 10 sec precooked bacon. Had a small inverter on husband's truck and with engine running we ran a George Foreman, 4 burger size and a one cup coffee pot. He also had an old style dorm refrig with freezer and a Coleman cooler that just ran off the batteries. This was back in 2008.

I reckon you don't have an APU to help out?

You may reckon what you like. You are now the second person to answer a question that wasn't asked. I didn't ask about electric skillets or microwaves. I didn't ask about what your husband did. This is like someone asking if you want a receipt at a convenience store and you respond with "Wow those CVS receipts are long". Relevant only that they both refer to receipts but not helpful. I asked a specific question about two very specific items.

When using an inverter for items that run 500 watts or more it’s best to keep the truck running. I have a 2000 watt inverter in my truck and I have a 900 watt microwave, and a 1700 watt roast oven. When I use any of them I have the truck running. If I’m just going to heat up water or food and If I’m at a truck stop I’ll use their microwave if it will take less than 5 mins. If I’m somewhere like a rest area I’ll start cooking or heating up my food before I shut the truck down. I had used a propane stove in my truck before. You don’t have to worry about carbon monoxide poisoning just keep a window open or cracked and keep the oven away from walls or things that can get heat damaged. The only problem is the propane bottles if you go through any tunnels often you won’t be able to have them.

    I would suggest an InstantPot...
It will do rice and a whole lot more.

I guess I have gotten lazy in my old age. I love those chef meals. Two weeks worth in the freezer, pop in the microwave at the end of the day and you have a really good hot dinner at the end of your day.

Some really good suggestions here. I'm new to the field, so obviously there will be a lot of trial and error.

My question is this. I like to make smoothies. Aside from the issue of wattage for running my Nutri Bullet, how would a driver get a hold of any fresh produce while out on the road? Maybe I'm pipe dreaming. I will be driving OTR so just stocking up beforehand won't necessarily solve the issue for me.
