Start by hanging. Bleed it and clean it. Pull the membranes, singe the hair off, bush and wash. Make up about 20 gallons of brine. Rub salt all over the inside and out side. Kosher works best. Pack the cavity with ice, put the whole thing in a tub, pack in some more ice, pour in the salt water to cover the whole thing. Let stand 24 hours. Now go outside and find a nice spot, dig a hole about half again bigger than the animal, about 3 1/2 feet deep. Find some good sized rocks and line the bottom and sides. Time to go to the store. 10 or so pounds of onions, several bunches of celery, lots of carrots, garlic. If you want, add a few lemons and herbs. Rosemary is good. Do all the prep work on the veggies, may want to cut most in half. The next day, pull that animal out of the brine, wash and drain, the dry it real good. Get your spit rod ready and skewer it. Rub the inside down with some salt, pack the cavity with all the veggies and tie it closed. Go out to that hole and dump in about 30 to 40 lbs of charcoal. You will need another 20 lbs, plus chips if you want to add some smoke. Burn the charcoal down to just a layer of coals, add more if needed. The rocks should be good and hot now. Put pig over. Add small amounts of charcoal to keep temp. Roast that thing until the skin is nice and crispy and the meat is cooked. Make sure to slowly keep it rotating. Gonna be several hours. Make sure you got beer. When it’s done, get help to move it off the heat. Start slicing hunks off and eat.Dadetrucking305, IH9300SBA, beastr123 and 11 others Thank this.

Trying to keep MoBee entertained at 0230hrs and ran into this post. She and I have always been proud of the fact that since our ancestors have set foot on this country, we have answered the call to arms for every war this country has ever been involved in.
They are going to hold her for discharge on Friday, at this writing Might as well, I have never known her to sleep in the hospital.
I have extended your speedy recovery wishes to her, she thanks you all.
