The sink cabinet has several strips of 3M Velcro across the bottom which secure it to the top of the desk console. The blue jug is a 7 gallon Aquatainer for my fresh water supply. The bucket is the drain tank.

I have the 12 volt RV fresh water pump mounted on the side with a two-way splitter valve on either end of the pump. When refilling the blue tank, I carry a smaller handheld jug to the truck. I switch the valves so that the pump pulls water from the handheld jug and sends it into the blue one. Afterward, I switch the valves back which directs the flow of water back up to the faucet. That keeps me from having to muscle a 7 gallon jug in an out of the truck. It lasts for several days. Most of the places we pickup and deliver to have sinks in the tanker bay. Being food grade facilities, their water supply is clean/filtered, so I use the opportunity to top off my fresh water supply at customers, IRT terminals, etc. I even have a countertop soap dispenser built in next to the faucet.

No kidding. I just have a gallon jug of water I chuck over my hands out the driver's door.

The Aquatainer came with a threaded hole in the lid. I installed a bulkhead fitting with a short piece of PVC pipe running to the bottom for my pickup tube. The brass bulkhead fitting to the side is the return for when I’m refilling the tank.

Below, you can see the two-way valves on the pump inlet/outlet. Those are actually RV winterizing kits, typically used for drawing antifreeze through a camper’s pump prior to winter. I used the same concept, but instead of antifreeze, it pulls from the handheld jug and sends it into the blue jug. The blue jug never leaves the Peterbilt cabinet this way.

I cut myself a small piece of birch to lay across the sink and convert it to a countertop when I cook with my Foreman grill.

I bought one of these Camco sink drains and screwed it onto the sink drain. The other end goes to the side of the cabinet. It has a 3/4 garden hose male fitting with a cap. From there, I just cut a short piece of garden hose and ran it to the drain bucket. It’s 2 gallons with a gasket sealing lid. When it gets full I just pop the lid off and grab the handle.
