When my Peterbilt 389 Coolant sensor went out about 250,000 miles ago, I simply unplugged the sensor at the tank and the buzzer went off. It just threw a code until I replaced it (I put a whole new tank on it).
Today, the low coolant buzzer went off……coolant plenty full…..so I unplugged it and the buzzer won’t go off. I tried the paperclip trick too. Nothing makes the buzzer go off.

Pull test the wires within the first foot of the harness. Broken copper inside the insulation is common up near the tank due to vibration. Spread pins at the sensor connector are also common.

Get a telescoping magnet and put down the tank sometimes the float sticks even new one's there's enough metal there to unstick it its worth a try worked on my 579.
