I am having issues with a ISX Cummins it keeps saying low coolant but it’s topped up, I bypassed the prongs coming off the sensor only 2 prongs there but still showing the light. It’s one of them hard plastic reservoirs. Even when I disconnect the plug
From the sensor still says low coolant!! Meter reading 5.0k ohms off the sensor

Sounds like wiring back to the ecm.
Test them for resistance to ground verify there integrity. -
If it is like mine (2013 660) there is a float inside the tank that will stick and cause this. Unplugging sensor check engine light stays on low coolant specific light goes off. Just a thought. Could be lots of other things as well.

I had the same issue on my 2014 Pete, I changed 2 coolant sensors(different times), the light went away each time then come back on. Then I changed the coolant reservoir(was already getting deteriorated), light still wouldn’t go away. So I had a tech look at it and ended being a wiring issue by the ECM.
