Whereabouts in Ohio are you starting and where in Texas are you heading to?
It's been a while since I've been north of the Red River but IIRC you should be just fine if you take I-70, I-44, and US 69.
Once you get here there are no mountains east of the Pecos. There are a couple good grades on I-10 around the 500 mile marker, but they're not very long and you should be able to handle them just fine using the proper gear and braking. Same thing with Ranger Hill up on I-20.

I'm from Texas too, and if you get on a ranch road in West Texas you will find some. I went out there a few years back on personal business and my wife went with me. I think I was going south out of Marathon and I saw what I thought was a hill, and the more I went up that thing the less of a hill it became. About half way up I lost sight of the road and all I could see was the hood of my truck and blue sky. I was a little rattled, but my poor wife was about 3 shades whiter than she started the day with and had a good bit of leather sucked up her skinny a s s.
