Not to butt in, but squirrel really should only go into shredded squirrel tacos, squirrel and dumplins, and squirrel and gravy.
My opinion only, but save the limb chickens for those three.

possum needs to be simmered for a long time. Kind of greasy. So you cook it first so you could skim off the grease.

my only complaint about squirrel is it takes so many of them and it’s a lot of work to get enough meat to make it worthwhile.

I've tasted some awfully good recipes here. Right there in WalMart town. I stick to the old stand bys.

Yeah, every time I shoot a mess, I think how I can cut up a deer faster than cleaning a mess of squirrels.

I just pull the hair off a quarter size spot on the back. Slice it open and dig each index finger in and pull it right off. Cut the tail, feet and head. Pretty quick
