I had picked up a 03 Pete(MBN cat) recently which I had posted previously a problem with it blowing coolant out of the overflow, Anyways it had a 7lb cap on the rad and according to Peterbilt it was supposed to have a 15lb. I swapped out the cap and no more coolant coming out the overflow. BUT; now I notice that when I turn on the fan before I shut it down or even while driving that the temp will stay at 190-195 no matter how long I leave it on. I thinking it could be either the water pump isn't pumping the coolant around or possible blockage somewhere or could it be a sensor problem? I see it has a temp probe on top tank and also one around the thermostat housing. Which one does the gauge read from.

that is what the thermostats are set at in most trucks if you dont think its anything internal check the ratiator fins to see if they are pluged with dirt the newer trucks have fins that are closer together and trap dirt easier.

The thermostat one is your temp gauge and also sends data to the computer. The one on the tank is your low level sensor.
They do have different range thermostats, 165 185 195, check your factory specs to see which you should have.
The problem could of been the cap itself.
Like superhauler said, make sure the radiator fins are clean. All these dusty parking lots can plug one up quick. -
another thing i thought of if you have dual thermos in the housing one could be sticking closed if you change the stats change both not just one.

well I'm not sure if there is actually anything wrong with it but compared to my older 98 with a 3406e when I hit the fan on I can watch the temperature on the gauge. On this 03 the temp doesn't seem to change once it reaches the thermostat temp of 190 fan on or off??It just stays there

The rad cap could have very well been the reason it was blowing out coolant. The thermostats are working properly. If you turn on the fan and the coolant goes below the opening and closing tempature then you have a problem. The temp sensor for the gauge is by the thermostat. as was stated and the coolant level sensor is the one in the rad top tank or surge tank. Just a thought!
