best way I have found to prepare is a fairly hot grill and a couple-few mins per side
ain’t trying to be all hoity toity, (im just a simple redneck from Pickens, SC) but best served with some mango chutney

question in regards to “mahi”
growing up fishing the atlantic, we would troll on a weed line to get FISH ON, and yank them mofos up and out.
we never called it “mahi”, from my neck of the woods, they were called dolphin, either a bull or a cow
reckon my question is, what say this group?
mahi, dorado or dolphin?
most folks here dolphin and immediately think of flipper and pals
to most, calling it dolphin kills the experience of eating em, so in my infinite wisdom, I think that the fish sellers had to come up with a more appealing name, so “mahi” or “dorado”

I once ordered "Roast leg of Lamb" in Tallulah, LA , in a hotel dining room. Got my plate with this slice of pale white meat with like greenish fowl crap on it.
The accompanying veggies were fine. So I advised the waitress, "Uh, I ordered the "Roast Leg of Lamb, Mam."..
She pointed to the slice ands said: "Thats it..".

Nice day on the mountain. Coming up Monarch has never bothered me, but I realized today, there really ain't much difference between the west side of Monarch, and the Ouray side of Red Mountain.
Biggest difference is you're just a couple more feet from the edge on Monarch, and the false sense of security the guardrail gives you in a few places.
