What are some good foods I can pack in a cooler that are healthy and last a long time or does not spoil at least for a month over the road?

Hit your local surplus store for MRE's. They last forever and are designed to give you all the nutrition you need and then some.

(Note: don't eat them 3x/day for months on end, or you might be forced to follow my friend Kelly's lead--they eventually broke down and broiled up an M1 Abrams.) :biggrin_2559:

I was thinking something a bit more healthy and less fattening. MREs are loaded with calories and fat. Not to mention expensive to purchase.

Get some canned goods and can opener. There are some low calorie soups out now. Plus you can also get canned meats and veggies. You don't need to store them in a cooler. You can put them in a microwavable container, take them into the truckstop and heat them up in the microwave ovens there. If you have a lunchbox cooker, you peel the paper wrap off your can and put in the cooker and heat it just like that. Just hit up a Wally world once a week and get your fruit, meat, juices, and salad stuff.

Be careful with the canned goods though if you're also watching your sodium intake. Also play close attention to labels. Manufacturers will claim something is lower in fat or sodium on the front label then showing a smaller portion size on the back. Of course if you're not eating as much then there won't be as much of anything in it. DUH! The general rule is that frozen is better than canned but even here you have to be careful. The cheaper house brands often aren't any better than the canned goods. Again, read the labels closely.
