I'm having a similar problem. I've been doing under the table oddjobs with no verifiable employment for the past 3 years (most of my adult life). I've never drawn unemployment. I'm 21 and fresh out of school with a Class A and all my endorsements, spotless MVR and criminal history. So would the notarized referral letter idea that Rerun8963 suggested be beneficial to me or am I SOL?

I think that answer will have to come from employers, and if you send in an application and don't get an answer, try to get on the phone and talk to a live human being.

How does anyone expect to get any answers from a company when you fax in an application? There's so many applications that come into these companies they do not waste any time trying to figure out any gaps or problems on the application. Into the round file your job goes.
There's so many lists of companies of any given area you can go out and find your own answers yourself by talking directly to the company. It just depends on how far you're willing to go. Remember, the better companies do not need to advertise and you'll never know unless you find out yourself. -
Just some thought;
As far as I can tell, if you've been working off the books, but you know someone that will say you were employed by him/her, this may be one way to fill in the "former employment" gap on the application.
In regards to proof of collecting unemployment benefits: If the previous employer paying into your benefits was a large trucking co, chances are they've tagged that info onto your DAC report. So if you're hired on by a new company that also uses DAC, it'll be revealed.
Of course if the company that paid into your unemployment benefit doesn't use DAC, you'd need to go the route explained in previous posts.

im on umemployment now (3 months so far) , Gonna do some traveling before before I look for work and go to CDL school. Of course I have two family members with different last names who own businesses
So I uhh *cough cough*wink wink* worked at company X for 5 years with a great reference and company Y for 6 years with a great reference

I told Stevens about my 2 years of "under the table paid in cash" time. It was NOT a problem. Just had to get 3 friends to write a letter saying it was true.
Oh, I see your from Fresno. Stevens is not hiring out of Cali right now. -
When work time gaps must be colored in; Always have someone say that you worked for them. Nothing in writing, just verbal. Even then it's probably best to know what the phone call recording laws are in state(s) the call is made & received from.
By having 3 friends sign that you worked off the books, they basically signed a statement (w/o statute of limitation) that can but used against you.
If Stevens decides to drop the bomb on you to the IRS. The IRS can subpoena your friends to testify against you. If your friends don't cooperate, my guess is the IRS will threaten them w/ the likes of being charged w/ perjury, etc, & the assurance of an audit they'll never forget which may lead to prison time. Maybe threaten an audit on their family members as well.
Furthermore; If Stevens blows the whistle on you, stevens can receive (if memory serves well) up to 15% of what the IRS collects from you.
Also note that whomever you gave those documents to may rat you out w/o stevens even knowing about it in order to collect a cash reward for their own personal gain.
Very bad move.
I'd strongly suggest that you don't piss off anyone # stevens. Hopefully that will help. This comes w/ no guarantee though.
