Snacks that hold up well on the road for diabetics...

    My husband just got his insulin exemption and I am pulliing my hair out as to what to buy for him to take on the road... He hates fruit, except banana's... Any ideas? Need low carb, low fat.... snacks that hold up in a truck...

    Content of sugar in carrots is too high.

    Flavored cracker types is stuff is ok. Eat 4 or 5 of them every couple of hours.

    I also bought some low fat whole wheat bars at costco and also some dehydrated fruit.

    Nuts, whole grain mini rice cakes, whole grain tortilla chips. Peeled cucumber slices, hard boiled eggs. Atkins or store brand low card granola bars. Sometimes these are in the pharmacy area but very little sugar.

    Does he have a fridge or cooler, or are you looking for snacks that don't need refrigeration?

    Carrots have too much sugar? Thats a new one on me...

    There are some fairly decent sugar-free cookies out there too. Thanks to the invention of Splenda, they arent too bad actually...

    Congrats to your husband on the exemption. Dont forget to do your quarterly physical and get the forms mailed in on time. It takes a long time for mail to reach these people due to security screenings, so they like you to fax the stuff in first and then mail it in.

    Yep he bought a fridge from his brother-in-law, he got a local job and didn't need it anymore. I guess it can be put on warm too. His first appointment with his endo is next month already, I did find some little cans of tuna mix with crackers that don't need refridgerated, low in sugar and fat... but will be hard to eat goin down the road... So far, banana's, turkey lunch meat and man does he love those Ritz crackers....grapes too... Thanks everyone for the help... Got to keep this man makin that money... lol

    I never heard that carrots have high sugar... I eat them all the time with no issues (I'm also diabetic.)

    I *do* have trouble with the rice cakes though, I guess the carbs in the rice do me in. :(

    I like carrots, radishes, celery, and an occasional slice of rye bread. My main diet consist mostly of salads, though, so it gets old. But it keeps the sugar down and helps keep the weight under control as an added bonus.
