Is their a satellite service that you can watch while in motion? Wife and I are going to be team drivers so the truck will not be stopped much.

I have no idea how well they work. If the truck isn't yours it might be very hard to get promission to mount one as it will create some drag and you know companies and their gas milage. Good luck if you go that way. -
the vuqube V30 will work..... mounts to the back of the cab..... only set's about 3" above the cab
I've seen them as low as $800.... but hard to fine at that price..... most of the time around $1,000
the NO DRIL mount is around $100..... most companies will be OK with it because it's a no drill mount BUT check first -
The VuQube V30 was discontinued some while ago. However, you can sometimes still find a refurbished or used one online at Ebay or others.
