I only have driven dry van and watertruck and now I am in a position (Off Hiway) where they want me to carry 4 high uncrushed vehicles on dirt roads. I am the newby and I do not want to raise a fuss but I do want to stay alive, what do you think about this?

I don't think 4 uncrushed cars will fit on any trailer. Just too much height there. They have to be chained, and checked frequently, since they are a very unstable shaped load. Car's aren't going to be that topheavy, but they just don't interlock and snuggle in with one another well uncrushed.

Imagine the high lift it will take to load that.

Off highway? Dirt roads around Las Vegas? They might fall over? Who cares?!?
Enjoy the show in your mirror!
In all seriousness, this IS done in Nevada (seen it), the roofs of the bottom two cars are generally mashed, and they load 'em with a crane

What type of pay for hauling them loads?

If you're scared do not do it stick to what you know ,and are comfortable with, but hell where's your sense of adventure.

Its done around here quite often. Just make sure its secured regularly and you should be ok
But if you dont feel comfortable with it, dont do it -
