cooking in the truck

    I want to use a rice cooker. I can make all kinds of great meals in a rice cooker.

    Chicken Enchilada Croc Pot Soup

    I got a Croc Pot for my truck to help me save money and eat healthier while out on the road. It's great I start it up in the morning when I start driving and since I drive for 8 hrs a day by the time I'm done driving dinner is ready. I wanted to try to cook enchilada's because I had a craving for them but wasn't sure how they would work in the croc pot. So I came up with Chicken Enchilada Croc Pot Soup. Here is what I used.

    about a pound skinless, boneless chicken breast halves
    1 can whole kernel corn (I used the southwest blend corn from green giant)
    2 cans diced tomatoes (I like it spicy so I did one can regular and one can diced with Habanero Peppers)
    1 can of black beans
    1 can chicken broth
    1 can enchilada sauce
    1 can diced green chiles
    1 onion, chopped
    2 bay leaves
    3 teaspoon of minced garlic (I don't have a way to use cloves in the truck but that would be about 3-4 cloves)
    1 teaspoon ground cumin
    1 teaspoon chili powder
    1 package of zesty ranch dressing mix

    1.Place the chicken into the bottom of the slow cooker. Add all the other ingredients on top of chicken. Stir the ingredients carefuly to mix them but leave the chicken on the bottom.

    2.Cook on Low for 5-6 hours. Transfer the chicken to a plate, then shred the meat with two forks. Return the chicken to the slow cooker and continue cooking for 30 minutes to 1 hour.

    A tasty, quick, hot meal! I toped mine with crushed corn tortilla chips, shredded mexican blend cheese and chopped green onions. I got all the ingrediants for $25.00 at Walmart so is cheap meal to. I think it will work good with pork or taco meat too will have to try that next. Was thinking about adding minute rice to it also but don't know if the rice will cook up. Am full now and have leftovers for a few days.

    Hi, just got a Coleman 12 volt 44 can (large size) PowerChill cooler. Question is can I safely keep it plugged in overnight? The instructions say only leave it plugged in with engine off for 4 hours. I'm driving a well maintained 2000 Volvo with fresh batteries, thanks,...Tom

    I don't know why you can't plug it in with the engine running, unless that's the reason the Colemans and Igloos burn up so many motors. They are famous for that. I used a Cool-a-Tron I bought at a Petro for over a year and it stayed plugged into a 12 volt socket the entire time, engine running or not. It kept things very cold. The only reason I quit using it was because I drive a Day Cab now, and just carry a small Igloo Cooler Mate for drinks and lunch. Now the only time I use it is on Road Trips in the SUV with my wife.

    As per the previous post, you should be Ok to run the thing 24/7. If you are leaving the truck for the weekend or to go into a hotel for an over-niter, then take the cooler with you, and empty it into the fridge, or plug it into the wall. Todays 'coolers' use most of the power up to reach the pre-set hot or cold temp. Actually maintaining the temp, once acheived, doesn't use that much power. That's what I found with my first Kool-A-Tron in '94. I ran that thing 24/7 for 3.5 years before I got a new truck with a real fridge. I still have that old Kool-A-Tron in the basement and use it for road trips with the kids in the mini van. I can prove that to the nae-sayers with the serial number. Maybe Kool A Tron will make me a STAR ? Only thing that went bum was the 12v auto cord burnt out after a year. Kool A Tron FedEx'ed me a new one. I think your 4 hour limit 'in the book' is probably focused towards the Sunday four-wheelers with their Hyundai Elantra's and their little 12V batteries. Your large car Volvo with it's four (?) batteries should run the fan no prob over night.

    Anyway, I have always said :

    "RTFM"

    or AKA

    "Read The ########## Manual"

    Manufactures specs always have the final say, especially where warranty is concerned.

    Any one have recommendations for the best brand of lunch box ovens, freezers and refrigerators/coolers? Thanks

    just a thought youy can start by reading this thread. It is full of such recommendations..

    Those recommendations are written for 4-wheelers not big trucks.
    It means if the engine is OFF don't leave it plugged in for more than 4 hours or you might need to jump start the vehicle. Remember 4 wheelers have one battery and they can drain rather easy.

    Big Trucks have multiple batteries and don't drain so fast..

    It's doesn't mean you can't idle the vehicle or run the vehicle with it plugged in..
