Red eye gravy?

    Anyone ever tried "Red eye gravy" ? I had it one day at a truck stop in Alabama. Cant remember which one but i remember the red eye gravy! It was bacon fat and coffee mixed together. I had it with fried eggs and biscuits.....#### it was GOOD!!!

    One of my wifes specialties. She usually uses the pan drippings from ham. Thanksgiving and Christmas dinners, the first question everyone asks as their coming in the door is, "Are you making redeye this year?". Of course with me around it's a moot question, gotta' have my "redeye"!!

    I've never known it to be made with bacon, around here its made from frying country ham and using the grease from it and coffee. Add flour to it and you have sawmill gravy.

    Never had it but I would be first in line to try some. MMMM, biscuits and gravy in the morning with a cup of coffee, is a great start to a day of trucking.
