cooking in the truck

    Dinner tonight will be stuffed porta bella mushrooms stuffed with a mixture of ground pork, chopped onions, garlic, and thyme; topped with a sun-dried tomato pesto and grated asiago cheese. Sided with spaghetti squash and basil butter..

    Quick to prepare, quick to cook...

    I have stuffed peppers cooking in my burton oven... when you start to smell dinner, its usually done!!

    For those of you who like good affordable food I am going to start documenting many of my cooks. Before I got behind the wheel of my truck I was and still am a rather good Chef and competitive BBQ'r

    I have noticed that in my old state of CT that most of the truck stops have the small fridges and truck accessories that are mentioned here but they are either low price low quality ( $80 -$100) or very expensive. But they are of the 12 volt variety. The companies that I have talked to said that they were ok but most of them want them to be installed by either themselves or a qualified mechanic for obvious reasons. There is also a website that I found that sells Truckers and RV appliances that seems to be good as well. and it is all items not just cooking. this may help http://www.roadtrucker.com/product-catalog.htm

    With all my cooking appliances I carry in my truck I think I eat pretty good. Here's a sampling of breakfast, lunch and dinner on any given day. My only issue is finding a dishwasher that works efficiently in the truck.

    haha they have dishwashers for the trucks trust me even a real side by side fridge. id'e hate to see what that does to the batts though never mind the poor altinater when the gen set is not running lol. i seen a truck with a darn fireplace in it what is this world comming to :biggrin_2555:

    Yeah, I think that's what most of us call a lunchbox cooker. I used one of those on the road. Great for heating stuff up or making a complete meal. It's great to be sitting in a parking lot somewhere and having hot soup or chili to go with a sandwich. I even cooked chicken breast with rice and veggies. I would load mine up, plug it in and used a bungee cord to strap it down for the ride.

    I don't know if this has been said yet or not but I always carried a Coleman single burner stove (The kind you screw a small propane tank to and the tank is the stand) and a square vegetable/fish basket. You can get the single burner stove at Walmart and you have to look around for the square basket.

    Sometimes when I was out on the road I would get a hankerin' for a big rare steak. Whenever that happened I would find a grocery store and get a nice t-bone or ribeye and put it in the basket with some Italian dressing on it and grill it up over the single burner stove. Not every truck stop is suitable to do this so you have to use your better judgement.
