out of gear is out of control. neutral = out of gear, even if the shifter is still in gear with the clutch pushed and held.
the reason behind this is if you do not downshift, and do as you say, the danger factor is tenfold. what if something happened and you needed to speed up to move out of the way of something? if you are in neutral, that fraction of a second it takes you to think roadspeed vs gear needed, something bad could happen. just saying. i am guilty of doing this very thing sometimes, and i have to remember what my school instructor used to tell everyone. "out of gear is out of control."

Personally I dont coast to stops and it dont really matter to me if your in gear or not coasting to a stop but I dont see how you think there is no difference in torque and resistance being in gear vs. neutral.

Yet another instructor who needs a swift kick in the nuts! While you don't want to be caught in neutral if you have an urgent need to accelerate, the truck is hardly "out of control." Are your options limited? Yes, but that's hardly out of control; no more than going down hill above your governed speed is out of control. Those of you who have gone through a CDL school need to take the time to examine what you were told by your instructors, and evaluate the validity of the blanket pronouncements like this. Because there are occasions where you'll want to do just what CadillacDude said not to do: push in the clutch and coast.
I'll shut up now, I'm just a dinosuar who learned on his own, who has never even taken a driving test in a big rig, so I don't know nothin'! Please continue to blindly follow your instructors infinite wisdom.

I do this once in a while when driving my pickup too, although when I do its usually because I am braking heavy and have already dropped lower than the gear would be useful at...so I quick switch to the next one and same thing. Or the other thing I will do is shift from 5th down to 3rd when coming to a stop rather than down shifting all of the gears.

It is very hard on a heavy duty transmission to coast in neutral, a better option is to leave it in a gear and once it begins to lug the engine push in the clutch and coast down that way.

engine speed/ rpms..foot off the fuel jake or no jake there is SOME drag..more wih the jakes..only time I'm not in a gear is when its parked
