    I'm thinking of making chicken enchilada cassarole tonight. It's just a shame we can't have margaritas with it. Oh well.

    I guess you could have a margarita or two... just be sure to sleep it off at least 8 - 10 hours get the alcohol out of your system...

    I don't do that, it's not worth the risk. But when I'm home, that's another story.

    whats the best foreman grill for using in a truck? the smallest one (GR10B) actually looks like it could be too small and the next size up says it uses over 1000 watts.

    edit - went with the smallest one just to be safe

    Overdrive Online released a short article today about the HTAA program that 10,000 drivers could earn over $800 participating in.

    I did a short writeup on it as well at Driving the Big Rigs.

    The Healthy Trucking Association is all about helping to improve the health of commercial drivers. They got a $20 million grant to conduct the program. More information is available at this page of the HTAA website.

    lol..... i have several enchilada casseroles in the freezer at home. they are all set to go into the lunchbox cooker!

    sadly, yesterday we had to put to rest our lunchbox cooker. after about 7 years of almost constant we put it to sleep. we will miss you little lunchbox.
    and on the happy note, we did get another one. tonight it was put to good use, meatloaf and baked potato for dinner.

    So now that I finally have my truck set up the way I want it, I went out to Walmart and bought groceries to last me 2 weeks. 2 nights ago I broiled BBQ chicken with mashed potatoes. Yesterday cooked a little pot roast with carrots and potatoes in the mini crackpot. And tonight I made some country style ribs in the oven. Only part I hate about cooking in the truck is finding a place to wash my dishes once I'm done.

    I usually refill a couple gallon jugs of water and keep it in the side door under bunk. Or like today, washed my skillet at walmart. I was surprised someone didn't look at me weird, lol.
