Although it's quick and easy to install a kit in a split jaw Holland, there are yoke fitting procedures that need to be followed that include some grinding and sometimes welding. If the procedures aren't followed you could still have slop in your fifth wheel after the rebuild.
rebuild or replace fifth wheel?

never have welded or grind one yet if you get the right rebuild kit for your fith wheel. there are (i think) 3 different types of the yoke fith wheel.
-
You can often install a kit without fitting or dressing the yoke and it will be acceptable, but sometimes it won't fly.

You may want to check out SIRCO for parts, you can get just the jaws, or a full rebuild kit with everything but the plate, they are a little more than half what Holland gets. I don't think they sell direct, I get there stuff from a local truck parts house.
If you are going to replace it, Jost replacements are around $650 on sale at Pete in northern IL, you just have to wait for the sale. -
Rebuilding the 5th wheel is cheaper however save yourself future headaches and get a new 5th wheel. If you have access to a forklift you can swap out the 5th wheel yourself make sure you have a helper though. I have swapped a few 5th wheels it is not very difficult. You will need a air compressor, impact gun and a torque wrench.

Are 5th wheels universal? How much is the average cost? Thanks in advanced
