Thanks for the direction. Walking is an option for lower body excersize and cardio. Probably should purchase a couple of those instant adjust dumbells for upper body. And there's always pushups.
Are refrigerators standard in a cab? Guess I can always bring a cooler and buy ice if not. There are a lot of healthy canned foods if I get desperate. I'm guessing hauling around little propane cannisters for a Coleman stove is a no no? Definitely like the idea of heating water with a pot that plugs into the lighter. Hope I can find one. -

It can be a bit of a challenge in certain areas and at certain truckstops.
I say certain areas and truckstops, because all you will find are fried foods on the buffet and a lot of times on the menu. Salad bars are a good place to find healthier fare, but it's not the total answer.
Buy a Cooler or ice chest. Stock it with your favorite stuff and go from there. You'll find better places to eat, as in truckstops that offer a wider variety of good food as you go along.
I wouldn't hesitate to buy a small grill or camping stove to cook on if that were my thing. Just be careful where you set up to cook. On the catwalk behind the sleeper and next to the fuel tanks and battery box is NOT a good place. -
