I change thermostat at CAT C15 and now water temperature going up and down. From 195 to 175 all the time. I thing is air in the system but i dont now how can take it out. Any help? Thanks

Is the gauge electric or mechanical? I've found it's common for the KW mech temp gauges to fluctuate like that.
The small hose from the t-stat housing to the radiator tank is the vent for purging air. Make sure it's not blocked. -
On the other hand, I had a customer with a fleet of C-15's that fluctuated like that every time a head gasket popped. Hope that's not your problem.

Before I change thermostat its working. Hold temperature obout 185. Its hapen after i change thermostat. First time I think its bad set of termostat. I buy new one and change agai but same result.

02 has 2 tstats, does yours? I assume you changed the seals in the base of the housing?

I change 2 times 2 thermostat 2 gasket 2 O rings. And yes I hve 2 therm
