Going Gluten Free

    I have been doing more experimenting in the kitchen. I have a new favorite food . . . risotto! Risotto, for those that haven't heard of it, is an Italian rice dish. It's a bit of a pain to make, but so worth it! It kind of reminds me of an alfredo sauce without being as loaded with fat, since the creamy texture comes from the starchy rice used to make it. I have found several other recipes that work well for me, including a bean & bacon soup recipe, potato soup, and a recipe for New England Clam Chowder. I have also been making chicken and rice soup, beef and rice soup, and a few other things that work well gluten free. I have also found a good bread that does not taste like sawdust. The brand is "Goodbye Gluten". They have a white and a whole grain version that are both good. I prefer it toasted, but at least can eat it if it's not toasted.

    I'll be having to experiment even more with the food, since I will be returning to the driver's seat in about a month! I'll have to come up with foods that will work for me as a driver now.

    I spent a week out on the road recently with hubby. We took a load down to south Texas (Harlingen) and another load back up, and the trip was completely pain free. I am getting the ball rolling so I can get back out on the road again. I really enjoyed being out on the road, and was wishing I could drive within a few hours of being out there.

    I'm thinking about putting together a cookbook in the future (I am already compiling recipes and ideas), since not only do I have to be gluten free, I am a picky eater that does not eat a lot of veggies. I know there are others out there like me!

    I have also broken my "diet" twice, once on purpose and once accidentally (wedding reception, had a couple of drinks and didn't think about what Jack Daniels is made with - rye and barley, two grains on the "not allowed" list), and it was hell to say the least. Took me at least two weeks for my system to return to normal.

    Diet isn't really the right word for having to change one's eating habits to avoid serious health consequences.

    I'm glad you are doing so well with the lifestyle changes you have had to make. It is a pain having to worry about no gluten. I guess on the road you will have to watch eating out for hidden items in food at restaurants.
