Back when I went to trucking school I was taught no. So I practiced that way. I took the CDL driving test with the window rolled up 75% and was comfortable and it felt 2nd nature for me though I was a rookie getting started.
I don't know what the law is for your state. Try practicing with the window rolled up, I was told in school it was an automatic failure, personal safety hazard to stick your head out of the window. I don't know this to be absolute truth. So just in case the range instructor was right, I learned to do it.
Good luck and I hope you pass. -
An Alley Dock is just the 45 or 90 degree parking thing, if I remember the term correctly. Do it anyway you want. Head out, head in, just don't do it with you head UP your a a s s s s. It is really very simple. Look at your tandems and let them cut around whatever you are trying not to hit.
The one thing you need to remember is your hand placement on the wheel. If looking in the mirror is too difficult for you then try moving your hand from a starting position of on the top to on the bottom. That will reverse the direction you need to spin the wheel and make it just like backing a car. -
I graduated yesterday from Roadmaster trucking school and the examinators I had did not count it as a get out. I am not 100% sure I don't want you to do it and get failed. Ask one of the examinators on test day if they are coming before your test day.

I stuck my head out when I tested

Where I tested (Massachusetts) we were allowed to look out the drivers window when doing the alley dock. I was told by my instructor that if for any reason you had to use a pull up and move forward you had to be looking forward . It was an automatic fail if you looked back out the window when pulling forward but not backwards)

Yeah, think my rule when training was do what you need just don't open the door...

I'm in a narrow cab Pete, so I usually have to pop my head out if I'm in a tight spot.
