Ok here's the list:
Replaced both thermostats...
Flushed out cooling system and replaced coolant...
Blew out all of the build-up between the cores....
Mainly overheats pulling long grades...
Oil temp spikes over 300*
Coolant spikes to 280*...
What's next?

Is the fan working? Is it a borg Warner fan hub, they are known to slip if the disc gets worn. Check your radiator cap. If the system can't build pressure the coolant boils. Are you pushing coolant from the system when hot? Could be a head gasket. Remove the return to the surge tank and make sure it's circulating coolant. Maybe the water pump impeller is slipping.

It don't much matter now your gonna need a new head, that's right one piece about 5 K us. As hot as that is I doubt its working, can you hear it come on loud roar then

I'm not losing any coolant either...
Water Pump is working too...

The issue is water pump. 90% sure one that one. Guessing your motor is between the yrs of 2007-2014. The fins in the pump are not flowing the coolant, they either broke or are chipped. Some pumps even use plastic fins in the cummins pump, horrible design causes lots of these issues. Just something to look into.

If it got that hot head gasket for sure, you will start seeing water in oil. Your fan does not seem to be coming on could be as little as a sensor. But first you have to find out if its coming on.Cross your fingers if it got that hot! r in

Ok, coolant and oil temps in that range will destroy an engine. They will also give you check engine lights and severe derate. Are you getting any check engine lights? Where are you getting these temp readings from? What kind of truck do you have, year and model. This may be a gauge issue.
