Find some fresh dirt, drive straight across it, and see if the trailer tires follow the same tracks as the tractor tires.. I have never seen a 5th wheel cause a trailer to dog-leg.

Line up both truck/trailer on straight painted line and move forward then backward. Mirrors can be deceiving.

I try to point the front wheels straight as possible when driving and use the lines on a nice, straight, smooth road and compare the angles between the trailer edge and painted lines on L&R sides. I've got an eye on it every day I'm rolling.
Road lean will throw it off a bit.
For S&G have you measured the 5th wheel hole to see if it sits centered between the rails?
