Food wise I rarely ever eat from food purchased at a truck stop. I have a refrigerator and keep it stocked with fresh organic produce. Most of what I eat is raw, fresh fruits and vegetables. If I eat meat it's going to be something good, like a ribeye steak at a decent establishment. Put down the simple carbohydrates and back away slowly.

You say both you and your wife. If you will be going as a team, expect to have loads that require constant moving and only stops for fuel, meals, and the 30 minute required rest stop during the first 8 hours of a driving shift. While some exercising is possible, having a set schedule might not be feasible. And as far as taking a run, well your location may not make that possible either.
Lastly, committing to driving only a year might not make much sense financially. You will have to have some type of training and then start driving at lower wages until you gain some experience.

Husband runs everyday on his breaks. He puts it in his trip planning so he's at a rest area or terminal. Also, he lifts with his barbells when I am driving.
At home or resets on road... He does a full workout.
The food is prepared at home and prepackaged in serving sizes so we can eat healthier.Chewy352 Thanks this. -
I just take 30 min 3 times during the week and walk or run and then do the weights on the weekends.......

Yes you can and you should -- plenty of time every day. Not too many of us you'll see do it though, much better fun to go and eat instead.

When you move 48,000 in 100 pound boxes 70 feet at a time to designated small wood in a grocery or meat warehouse you will get your exercise in. The key is to eat your calories like fuel, Protein especially. And if you park a mile from the warehouse dock office there is your exercise too.
Being active is key. Remember when you finish your driving and arrive to deliver at Acme Lump Inc. To unload by hand, you can work 70 hours in there and no one will tell you different, except one rule, you must sleep 8 or 10 before you drive again. And most of you know that there is a reload waiting already. Have dispatch send a tractor to load, bring trailer to your gate/lot and do a interchange on the spot. Give him the empty trailer to load.
IF you tear something like a muscle or tendon, you either did not hydrate enough or you tried to move something too heavy or too large in lifting angle for the weight.
When you break down as I have in Maryland, you will have a obstacle course made up of concrete things poured on 20 to 50 foot heights, large angles etc don't slip.
IF you are fit like I was, you can do anything you require of your body on demand. 1200 foot rock wall in Maryland Heights Md Across from Harpers Ferry? Easy. 20 minutes up and 20 down. I would not dream of doing that now. No way no how. Age and time marches on against you.
