If I wanted to power a single electric burner (1100 watts) could I use a 12v power inverter?

No, you won't get much more than 300 watts from a 12v connection, all you'll end up doing is blowing the fuse, and if you put in a higher rated fuse, you'll just cause something to melt and then possibly a short or even a fire

What would you recommend doing to power a burner like that?

I have a 2000 watt invertor hard wired to the batteries and use use a little single burner hot plate but I have to run my APU or idle the truck or else it drains the batteries very quickly

Well it says it's an 1100watt burner, so you'll need an inverter that can sustain at least 1100 watts, so I suggest at a minimum 1500watt sustainable inverter, and the only way to install one of those is to hard wire it straight to the batteries.

No offense here but don't be stupid and try to play around with this stuff, drivers have died because they tried to circumvent wiring an inverter in incorrectly.

Thank you, that's why I asked first. I don't know much about that stuff.

Recommend a pure sine wave inverter over a modified sine wave the truck spots sell. Everything works much better. Will cost a bit more but we'll worth it. I had a 2000 watt Xantrex pure sine that worked great. They are about 350+.

NOT all inverters, even the good expensive ones are designed to handle inductive loads so be careful to ask or check before plugging it in.
