That seems like an awesome setup, although perhaps a bit more fridge than i'm looking for. What concerns me with 120V fridges though is the power supply... big inverters are inherently inefficient, won't that kill my battery on a 10 hour break?
Also, Cascadia cabinets are a solid top-bottom unit on each side, can't just remove the bottom part without taking a buzz saw to it.

Theses fridges are pretty efficient. A 1500 watt inverter could easily power it. Not both the Microwave and fridge at same time,.. but if you just need the fridge,.. then yes a small 1500 watt would suffice. I use a 4000 watt peak,.. 3000 watt continuous pure sine wave inverter. I can do a 34 hour restart and leave everything on the inverter and have no problems. In fact I have sat entire weekends on the battery before I got my generator and never had a problem.
How ever,.. I use a Honda generator as my APU when parked. The inverter is only used for when driving,.. so its not a big deal. I need the power of the generator for when I cook in the truck. Forman grill and hot plate during cold indoor cooking. Hiibachi grill to cook on my battery box when the weather is nice. Microwave is used mainly for heating a quick ramen soup, dintymore beef stew,.. hot dogs or something like that. Grilled ham n cheese goes on the forman,.. hamburgers and steaks work on the forman too when I cant use the hibachi. Pancakes, eggs and sausage in frying pan on the hotplate.
If you look closely,.. the cascadia cabinet on either side,.. should have a middle that comes apart. Columbia is set up very similar inside as the Cascadia. And personally,.. I wouldnt hesitate to talk a sawzall to a cabinet. Get some paneling trim pieces from a hardware store to clean up the edges,.. viola.
