In Texas, you would be in no more trouble having a wreck while driving on the shoulder as you would wrecking while driving in the travel lane.
Texas Transportation Code § 545.058. Driving on Improved Shoulder
(a) An operator may drive on an improved shoulder to the right of the main traveled portion of a roadway if that operation is necessary and may be done safely, but only:
(1) to stop, stand, or park;
(2) to accelerate before entering the main traveled lane of traffic;
(3) to decelerate before making a right turn;
(4) to pass another vehicle that is slowing or stopped on the main traveled portion of the highway, disabled, or preparing to make a left turn;
(5) to allow another vehicle traveling faster to pass;
(6) as permitted or required by an official traffic-control device; or

So if you're driving 10 mph below the speed limit, and you won't move over as the law allows to permit traffic to safely pass, what do you call it? Besides ignorant, selfish, discourteous, rude, impudent, or insolent?

The shoulder on that hwy is very wide and plenty safe for a truck to pass. It is designed for that purpose and is as free of derbies as the main lane.
OP my guess would be that the first time you took the shoulder the OD truck backed off to get a running start at you so that he could pass as fast as possible. What you should have done was watched your mirrors and when you saw him approaching again moved over to the shoulder and let him by. If you don't drive TX all the time I could understand the confusion. -
Still won't catch me driving on the shoulder lol If im running 60-65 and they wanna do 75 they can over take me in no time

Yup. And eventually you'll run across that one guy who is aggravated enough over your stupid insistence upon blocking the road that he'll do something equally stupid...then you'll both be sitting there on the side of the road with torn up stuff.
The law in Texas says you can stay out of people's way. Do it. You know as well as I do how some people get, and part of being a safe and defensive driver is using ALL of the tools available to you in order to minimize the likelihood of an incident occurring around you. The fact that you refuse to do so, and instead insist upon driving with your head up your derrier tells me you are about as "safe" as our resident videographer who likes to create situations to catch on his cameras to generate views on his youtube channel. A safe driver does what he can to encourage those around him to behave in a safe manner. If that means doing what the law allows and letting them pass safely, then do it. There is nothing safe about a mile long line of traffic frustrated at a truck rolling 10+ mph below the speed limit refusing to allow anyone to pass. Eventually they start taking chances they wouldn't otherwise take...and you're right there to be caught up in it.
