You could just put a standard latch on it with a lock, wouldn't look pretty but would be functional.
Just need to make sure you have proper supports for the bolts or else it will crack the fiberglass. Won't stop determined people, but would at least slow them down.

I wouldn't worry about that, I would worry about your fuel tanks and that fuel evaporating and appearing into someone else's tanks.

you may have to check either online, or in person, one of those truck customizer shops. maybe they have an inside cable, like on your personal car/truck, that you pull on to release the hood.
but this will cost money and if it's a company truck? i doubt they will allow it or reimburse you. -
