I would suggest that as your boss drives that you sit in the passenger seat and close your eyes and listen.
Just listen to the truck. Listen to the sound the engine makes as it revs as he shift gears and as he picks up speed.
If you listen to that over and over and over again, you should be able to remember it like a song. Then recreate that song when you drive.
You are fortunate that your boss puts the time in to help you.
He must see potential within you.

You seem to want to just float gears.
That's being lazy.
What you need to learn is there is ONE RPM for torque, below which she aint gonna pull for nothing and buck on you. That's called lugging.
There is ONE RPM for high horsepower, beyond which she has asthma when you hit a small hill and your speed falls fast.
Between these two RPM's are your shift range. I think my last truck did 1250 to 1550 or so, 300 rpm steps through all the gears. Maybe you have fewer gears and a larger 500 rpm step between them.
You will find that when you are going up or down in the shifting at the right rpms that next gear is going to fall right in no trouble.
You will double clutch until you get it all up and down. When a certain amount of driving has passed, floating will become a level up to you. -

Not sure what your talking about in B.C. Canada you cant drive a manual truck with a auto license. There are 2 separate tests and to drive both you need to test in a manual transmission otherwise if you just test in an auto your only allowed to drive auto
