If the weather eases up in Montana, I'd see about I-25 to 90. Otherwise, I-70. Chances are good that I-80 will close to high profile vehicles, so you'll be stuck in Cheyenne or Laramie. Gusts over 40 MPH will push you around like an empty plastic bag.

...also depends which way the wind is blowing. If it's east or west wind, you don't want to be on I25 in Wyoming or northern Colorado.

Wyoming is the absolute worst place to be typically with a light trailer. 80 would be my last option except if there’s weather on 70 west of Denver. With that weight, the mountains won’t cause an issue unless there’s snow/ice. With a jake, your brakes won’t get too much of a workout.
I hate 70 in Colorado because west of Denver, there aren’t any services for trucks until you basically get to Grand Junction. And that scale in Fruita always seems to get a hard-on for inspections. I'm a little late to the party, but I would probably go 287 to Laramie then 30 to Walcott Jct exit 235 I80. I've taken many trips on 30 to get away from the wind on Elk Mtn.
I've run some obscene out of route miles due to the weather because of my commitment to a team load. The "team" commitment is very important, if the shipper/receiver could wait another day they would have paid expedited or regular freight.

I-25 to 80 maybe.
Cheyenne is under a highwind warning until 8 tonight with the worst of the winds 65 or better. More than enough to blow any rig down.
Im half tempted to sit until Tuesday and then get through Cheyenne and push into Montana for seattle as the system moves east. But that's me.
