    How much heat?

    Seems like it would burn the outside and leave the middle nearly raw if it’s thick enough.

    Heat the iron skillet up until the olive oil smokes when you pour it on there. Cook it for about 6-8 minutes per side, covered. I like my steak medium to medium well. The reason it doesn’t burn and leave it raw is the steak is in constant contact with an even temperature instead of a flame and it sears the outside and instantly seals in the juices. If you cook a steak til it’s dry on a flat iron, you fell asleep.

    You're not really saving any time going that way. Yeah you save a few miles, 14 or 16 I think, but as crowded as Ft Collins is anymore you're usually money ahead to run up 25 to I-80 and across.

    Yeah, kinda figured even with going through Ft Collins at 0300 I’ll hit a red light or two. Regardless I’ll probably go that way knowing me... I gotta fill the tanks at Laramie anyway before shooting across to Rock Springs.
