Question For Everyone that drives Sprinter Van's, Ford transit, do you all stop at Weigh Scales? Do you pick and choose certain ones, or don't stop at all?

I'm in an F550 and the sign at all the scales here says: "All commercial vehicles over 4,500kg must enter scales when lights flashing" so I hit the scales when the lights are flashing. Feels weird driving a glorified pickup over the scales but I didn't make the rules lol.

From what I have been told, if you have a DOT number on the side of your vehicle you have to go through the scales no matter how big or small your vehicle is.

I rather enter if not sure, than not to enter, and have the DOT officer catch me several miles down the road.

Depends on the state. Some are all CMV's, some are all semi's, and some are all vehicles over X pounds.
Here is a website that lists the requirements by state. I'd bookmark it and check it at the start of the day until you memorize the states you go through.
