Ceviche. Best with some of that lime Mayo spread on a tostada shell and then use that to scoop the ceviche out of your bowl.

 

Never heard of it, but it sounds delicious

 

Basically it's 4 bags medium frozen shrimp (oddly enough the kind from Walmart is best). Cut into small pieces and soaked in a little lemon juice. Add 64 oz. Clamato picante, 1/2 diced red onion, 4 diced cucumbers, 1/4 cup (or less) chopped cilantro and 5 or 6 diced tomatoes and once or two finely chopped serrano peppers. We also add diced avocado to ours.

It's best cold and better the next day as leftovers.
